Diabetes is a condition that most Filipinos are familiar with. Like other health conditions, diabetes poses a threat to the quality of life of people. To combat the onset of diabetes in our health, for this year’s World Diabetes Day, we are calling on every Ka-Cookmunity into action by taking on a lifestyle change by switching to healthier diet.
Lemon Grass Chicken with Garlic-Tamarind Sauce
Looking for a diabetic-friendly dishes can be your first step into being mindful of your lifestyle. This flavorful and nutritious Lemon Grass Chicken with Garlic-Tamarind Sauce uses Coco sugar which is a great alternative for people with diabetes to regular sugar because it has Inulin, a fiber which slows sugar absorption making post-meal blood sugar spike less likely.
In a bowl, combine lemon grass, garlic, AJI-NO-MOTO® Umami Seasoning, calamansi, black pepper, coco sugar, and chicken. Mix well and let it marinate in the fridge for at least 15 minutes.
AJI-NO-MOTO® Umami Seasoning is made from natural crops like cassava and sugarcane through the natural process of fermentation. It brings out the savory-deliciousness of the dish through the taste of umami.
For the sauce, in a saucepan, combine tamarind, garlic, coconut milk, water, AJI-NO-MOTO®, and coco sugar. Mix well and let it simmer for 15 minutes until sauce has thickened then set aside.
Heat oil in a griddle pan then grill marinated chicken for about 5 minutes on each side or until cooked. Pan-grill chicken in low to medium flame to avoid burnt taste.
In a plate, place chicken and serve sauce on the side. Serve & enjoy!
