Vegetable Pot Pie

CRISPY FRY® Breading Mix (Original)

Ingredients

White Sauce:
  • 2 Tbsps. (30g) Butter
  • 1/2 pack (31g) CRISPY FRY® Breading Mix (Original)
  • 2 cups (450ml) Fresh milk
  • 1/4 cup (20g) Cheddar cheese, diced
Mashed Potato:
  • 1/2 cup (125ml) White sauce
  • 1/2 kilo (500g) Potato, peeled, boiled, mashed
Sautéed Vegetables Filling:
  • 1 Tbsp. (15g) Butter
  • 1/2 cup (50g) Onion, chopped
  • 2 Tbsps. (20g) Garlic, minced
  • 1/4 cup (50g) Carrot, cubed
  • 1/4 cup (40g) Red bell pepper, chopped
  • 1/4 cup (70g) Green peas, frozen
  • 1/4 cup (50g) Canned corn, whole kernel, drained
  • 2 cups (150g) Fresh button mushrooms, sliced
  • 1 cup (100g) Cauliflower, florets
  • 1 1/2 cups (375ml) White sauce
Toasted Breadcrumbs:
  • 1 Tbsp. (15g) Butter
  • 2 Tbsps. (15g) Breadcrumbs
  • 1/2 pack (31g) CRISPY FRY® Breading Mix (Original)
  • 3 Tbsps. (20g) Parsley leaves, chopped

Procedure

  1. WHISK. To prepare white sauce, melt butter in a saucepan. Add CRISPY FRY® Breading Mix (Original) and whisk to combine. Slowly add milk while whisking until smooth. Add the cheese, mix well. Take 1/2 cup of white sauce and mix it with the mashed potatoes. Set these aside.
  2. SAUTÉ. To prepare vegetable filling, in a pan, melt butter. Sauté onion and garlic until fragrant. Add carrots, bell pepper, green peas, corn kernel, mushrooms, and cauliflower. Sauté for 5 minutes or until half-cooked. Add the white sauce, mix well. Set aside.
  3. TOAST. To prepare toasted breadcrumbs, melt butter in a separate saucepan. Add breadcrumbs and CRISPY FRY® Breading Mix (Original), cook until golden brown. Add parsley. Mix well then set aside.
  4. ASSEMBLE & SERVE. In a ramekin, add the sautéed vegetable filling at the bottom. Spread the mashed potato evenly on top. Then sprinkle with toasted breadcrumbs. Serve and enjoy.

Cooking Tips

You can prepare the pies ahead of time then keep them covered in the refrigerator. Before serving, reheat in a preheated oven, microwave or in a toasted oven.
