Vegan Meatball One Pot Pasta
AJI-NO-MOTO® Umami SeasoningIngredients
Vegan Meatball mixture:
- 1 cup (130g) Cauliflower, grated
- 2 cups (100g) Kangkong leaves, minced
- 1 1/2 cups (250g) Tofu, crumbled
- 1 Tbsp. (10g) Garlic, minced
- 1/4 pack (2.5g) AJI-NO-MOTO® Umami Seasoning
- 1/8 tsp (0.7g) Salt, iodized
- 1/4 cup (40g) Flour
- 1/4 cup (62.5ml) Oil
- 1 Tbsp. (15ml) Oil
- 1 Tbsp. (10g) Garlic, minced
- 1/4 cup (45g) Onion, white, chopped
- 1 cup (150g) Tomato, chopped
- 2 Tbsps. (30g) Tomato paste
- 1 liter (1000ml) Water
- 200g (200g) Spaghetti, raw
- 3/4 pack (7.5g) AJI-NO-MOTO® Umami Seasoning
- 1/8 tsp. (1g) Salt, iodized
- 1/8 tsp (0.5g) Black pepper, ground
- 2 tsps. (10g) Brown sugar
- 2 Tbsps. (10g) Parsely, chopped
- 2 Tbsps. (20g) Parmesan, grated
Procedure
- COMBINE & MOLD. In a bowl combine cauliflower, kangkong, tofu, garlic, AJI-NO-MOTO®, salt, and flour. Mix well then scoop 1 tablespoon mixture and mold into a ball.
- PAN-FRY. Heat oil in the pot then pan-fry the vegan meatballs until golden brown. Drain in a colander then set aside.
- SAUTE & BOIL. Add additional oil to the pot then sauté garlic and onion until fragrant. Add tomatoes and tomato paste, then continue to sauté until mushy. Add water, once it's boiling add the spaghetti and cook until al dente.
- SEASON & MIX. Once the pasta is cooked, season with AJI-NO-MOTO®, salt, black pepper, and brown sugar. Add the fried vegan meatballs to the pot then mix well.
- SERVE. Transfer the pasta to a serving plate then optional to sprinkle parsley and parmesan cheese all over. Serve and enjoy!
Cooking Tips
Put the molded vegan meatballs in the freezer for 5 minutes before frying to retain the shape.
