- 5 pieces Egg, large
- 2 pieces Egg, large
- 1/2 cup Aji-Mayo® Professional Style Mayonnaise
- 1 Tbsp. Green onion, chopped
- 1/4 tsp. Ground pepper
- 4 slices White bread
- Parchment paper
Procedure
- BOIL. Hard-boiled egg: Cook 5 eggs in boiling water for 10 minutes. Cool in ice bath before peeling. Separate egg yolk from white. Set aside. Soft-boiled egg: Cook 2 eggs in boiling water for 6 minutes. Cool in ice bath before peeling. Set aside.
- PREPARE. In a bowl, mash the egg yolk and mix with Aji-Mayo®. Finely chop the egg white before adding into the mixture. Add chopped green onions for extra flavor. Season with pepper.
- ASSEMBLE. Trim bread crust if desired. Add 2 tablespoons of egg mixture on one side of the bread. Place a soft boiled egg on the center then add another tablespoon of the egg mixture before placing the second bread slice on top. Wrap with parchment paper.
- SERVE. Cut the sandwich in half to reveal the runny yolk. Enjoy!
Cooking Tips
Let eggs sit at room temperature before boiling. Putting very cold eggs directly into hot water can increase the risk of cracking and may affect how evenly they cook.
