Sweet & Spicy Steamed Fish
AJI-NO-MOTO® Umami SeasoningIngredients
Fish:
- 1 liter (1000ml) Water
- 2 kilos (2000g) Cream Dory, fillet, frozen
- 2 Tbsps. (10g) Ginger, sliced
- 1/2 cup (125ml) Water
- 1 pack (11g) AJI-NO-MOTO® Umami Seasoning
- 1/4 cup (62.5ml) Soy sauce
- 4 Tbsps. (60g) Sugar, brown
- 1 tsp. (5g) Ginger, grated
- 2 tsps. (10ml) Sake, for cooking
- 1/3 cup (15g) Spring onion, julienned
- 1/2 cup (50g) Carrot, julienned
- 2 1/2 Tbsps. (10g) Cilantro, chopped
- 1 Tbsps. (15ml) Chili oil
- 1 Tbsp. (8g) Garlic, toasted
Procedure
- STEAM. Pour water in a steamer and let it boil. Steam fish with ginger slices on top for about 10 minutes.
- SIMMER. In a sauce pan, combine water, AJI-NO-MOTO®, soy sauce, sugar, ginger, and sake, then simmer until sauce has thickened.
- ASSEMBLE & SERVE. Transfer fish on a serving plate then put spring onion, carrot, and cilantro on top. Drizzle with chili oil and sprinkle with garlic, serve & enjoy!
Cooking Tips
For thicker sauce consistency, you may replace sugar with honey.
