Potato and Beef Layered Casserole

Ground beef:
- 4 Tbsps. (60ml) Oil
- 1/4 kilo (250g) Ground beef
- 1/4 kilo (250g) Corn kernels
- 2 tsps. (10ml) Fish sauce
- 3 Tbsps. (45g) Butter, unsalted
- 4 Tbsps. (60g) All-purpose flour
- 2 cups (500ml) Fresh milk
- 2 tsps. (10ml) Fish sauce
- 2 cups (350g) Potatoes, thin rounds
- 1 pack (8g) AJI-GINISA® Flavor Seasoning Mix
- 3 1/2 cups (350g) Zucchini, thin rounds
- 2 cups (200g) Tomatoes, thin rounds
- 2 cups (50g) Spinach, leaves separated
- 1/2 cup (50g) Quickmelt cheese, shredded
- 2 Tbsps. (10g) Parsley (optional)
Procedure
- SAUTÉ. In a pan, heat oil. Sauté ground beef until browned. Add corn kernels and fish sauce. Cook for 2 minutes then set aside.
- WHISK & THICKEN. In a saucepan, melt butter then add flour. Mix until combined then slowly add milk while whisking continuously, making sure that no lumps will form. Continue whisking until sauce is thick then season with fish sauce. Set aside.
- ARRANGE. Season potatoes with AJI-GINISA®. Toss well. In a baking dish, layer the ground beef mixture, zucchini, tomato, spinach, and potatoes. Pour the bechamel sauce on top then add grated cheese.
- BAKE. In a preheated oven at 190°C (375 °F), bake the casserole for 30-45 minutes or until cheese has melted and vegetables are cooked through.
- SERVE. Let the casserole slightly cool before slicing then transfer to a plate. Optional to garnish with parsley. Serve with 1 slice of mango for a complete meal.
Cooking Tips
Fill your casserole dish until it's about three-quarters of the pan so you can leave room for the ingredients to bubble up. If you're worried about spillover, set the casserole dish on a baking sheet before placing it in the oven.
