SARSAYA® Oyster Sauce

Ingredients

  • 3 Liters (3000ml) Water
  • 1 Tbsp. (20g) Ginger, crushed
  • 1/2 Tbsp. (10g) Salt
  • 1/2 cup (125ml) Vinegar
  • 1/2 cup (120g) Ox tripe, washed, strips
  • 1 cup (150g) Pork liver, washed, strips
  • 1 1/2 cups (200g) Pork intestine, washed, strips
  • 1 cup (200g) Pig heart, washed, strips
  • 2 Tbsps. (20g) Annatto seed
  • 2 Tbsps. (30ml) Cooking oil
  • 2 Tbsps. (20g) Garlic, minced
  • 1/2 cup (60g) Red onion, chopped
  • 1 Tbsp (15g) Ginger, chopped
  • 3/4 cup (100g) Potato, julienned
  • 3/4 cup (60g) Carrot, julienned
  • 1/4 kilo (250g) Pork, strips
  • 5 pcs (1.5g) Bay leaves
  • 1 1/2 cups (320g) Pineapple juice
  • 3 packs (90g) SARSAYA® Oyster Sauce
  • 2 Tbsps. (30g) Vinegar
  • 1 Tbsp. (15g) Soy sauce
  • 1 tsp. (5g) Hot sauce
  • 1 tsp. (2g) Salt
  • 1/2 tsp. (1g) Black pepper, ground

Procedure

  1. 1. BOIL. . In a large pot with water, ginger, salt, and vinegar, boil ox tripe, pork liver, pork intestine, and pig heart until tender. Remove any scum that rises to the surface and cook until the meats are tender. Turn off the heat, remove the meat, and slice all the boiled meat. Set aside.
  2. 2. SIMMER. . In a saucepan, combine annatto seeds and cooking oil. Simmer for 2 minutes, then drain to keep the annatto oil.
  3. 3. SAUTE. . Heat oil in a pan. Sauté garlic, onion, and ginger until fragrant, about 1 minute. Add the pork strips and boiled innards and sauté for an additional 5 minutes.
  4. 4. SIMMER. . Add potatoes and carrots to the pan and mix. Add bay leaves, pineapple juice, SARSAYA®, vinegar, soy sauce, hot sauce, salt, and pepper. Mix well until everything is well incorporated. Let it simmer for 10 minutes or until the sauce is reduced.
  5. 5. SERVE. . Turn off heat and transfer onto a serving plate then enjoy!

Cooking Tips

Make sure to thoroughly wash organ meats and rub with salt, prior to boiling to reduce gamey and unpleasant taste. You may add laurel leaves, ginger, vinegar, and salt while boiling as well.
