Orange Chicken
CRISPY FRY® Breading Mix OriginalIngredients
FOR THE CHICKEN
- 1kg. (995g) Chicken thighs, boneless, skin-on, cut into bite-sized
- 1 pack (62g) CRISPY FRY® Breading Mix Original
- 2 pcs. (100ml) Egg, beaten
- 2 cups (500ml) Oil
- 1 and 1/2 cup (340ml) Orange Juice
- 1/4 cup (60g) Sugar
- 1 Tbsp (15ml) Vinegar
- 1/2 tsp. (2.5g) Ginger, grated
- 3 cloves (15g) Garlic, minced
- 2 tsp. (10g) Orange zest
- 2 tsps. (10ml) Sesame oil
- 2 tsp. (10g) Cornstarch
- 2 Tbsps. (30ml) Water
- 1 tsp. (5g) Salt, iodized
- 1 Tbsps. (15g) Spring onion, chopp]ed, for garnish
Procedure
- COAT. Coat the chicken in CRISPY FRY®, dip in egg, then coat again with CRISPY FRY®. Set aside on a plate.
- FRY. Heat oil in a heavy pot over medium-high heat. Fry the chicken in batches, turning often, until golden brown. Transfer to a paper towel-lined plate and set aside.
- SIMMER. In a pot, combine orange juice, sugar, vinegar, ginger, garlic, and zest. Simmer for 3 minutes, strain, then return to the pot. Add sesame oil and simmer for 1 minute.
- THICKEN. Whisk 2 tsp cornstarch with 2 Tbsp water in a small bowl to make a slurry. Gradually stir it into the pot and cook for 3 minutes until the sauce reaches your desired consistency. Season with salt and remove from heat.
- TOSS AND SERVE. Toss the chicken with the orange sauce until evenly coated. Sprinkle the dish with green onions and enjoy!
