Lengua Estufado
AJI-GINISA® Flavor Seasoning MixIngredients
Beef Stock:
- 1 1/2 kilos (1500g) Beef tongue (Lengua), thinly sliced
- 1 1/2 packs (12g) AJI-GINISA® Flavor Seasoning Mix
- 1 tsp. (2.3g) Peppercorn, whole
- 2 Tbsps. (30g) Garlic, crushed
- 2 pcs. (2g) Laurel leaves (Bay leaves), dried
- 3 Liters (3000ml) Water
- 4 Tbsps. (60ml) Cooking oil
- 2 Tbsps. (30g) Garlic, crushed
- 1/4 cup (60g) Onion, minced
- 2 Tbsps. (35g) Tomato paste
- 1/2 cup (120ml) Red wine
- 1 can (400g) Canned tomatoes, diced
- 1 1/2 packs (12g) AJI-GINISA® Flavor Seasoning Mix
- 1 tsp. (3.75g) Peppercorn, whole
- 2 pcs. (2g) Laurel leaves, dried
- 1 1/2 cups (250g) Carrots, peeled, sliced into chunks
- 1 1/2 cups (250g) Potatoes, peeled, sliced into chunks
- 1/4 cup (60g) Red bell pepper, chunked
Procedure
- SIMMER. In a large pot, add beef tongue, AJI-GINISA®, peppercorn, garlic, laurel leaves, and water. Boil until white skin is easy to peel off then simmer for 2 hours. Separate tongue from the liquid (beef stock). Save liquid for next step. Set aside.
- SAUTÉ & STIR. To make the sauce, heat oil in a large pan. Sauté garlic, onion, and tomato paste until fragrant. Pour in red wine while scraping the bottom of the pan. Add canned tomatoes and let simmer.
- SIMMER. Add 1 liter beef stock (from simmered tongue), AJI-GINISA®, peppercorns, laurel leaves, and beef tongue. Simmer for 2 hours.
- BOIL. Remove the beef tongue from the large pan, cool down, slice thinly then set aside. In the same pan, boil carrots and potatoes in the sauce until soft. Add bell peppers just before turning off the heat.
- SERVE. On a serving platter, put thin slices of lengua then serve with the sauce and boiled vegetables. Enjoy hot.
Cooking Tips
Let the beef tongue cool down to room temperature to slice the meat easily.
