Sweet Potato “Kamote” Nachos

Kamote Nachos:
- 2 cups (320g) Sweet potatoes, thinly sliced rounds
- 2 Tbsps. (30ml) Cooking oil
- 1/4 tsp. (1.25g) Salt, coarse
- 1 Tbsp. (15ml) Cooking oil
- 2 Tbsps. (20g) Red onion, diced
- 1 1/2 Tbsp. (15g) Garlic, minced
- 1/2 kilo (500g) Ground beef
- 1 cup (250ml) Tomato puree
- 1 can (300g) Black beans, canned, drained
- 1 Tbsp. (10g) Cumin powder
- 1 pack (8g) AJI-GINISA® Flavor Seasoning Mix
- 1/4 tsp. (1.25g) Salt, coarse
- 1/4 tsp. (0.6g) Black pepper, ground
- 1/2 cup (45g) Tomato, diced
- 1/2 cup (45g) Ripe avocado, diced
- 1/2 cup (45g) White onion, diced
- 1 cup (25g) Coriander or Cilantro leaves, chopped
- 1 cup (125g) Cheddar cheese, shredded
- 2 Tbsps. (30g) Sour cream or Yogurt (optional)
Procedure
- BAKE. To cook kamote nachos, toss together sweet potato, oil, and salt in a bowl. Arrange this on a baking tray lined with parchment paper. Bake the potatoes at 220°C for 15-20 minutes or until crispy. Set aside.
- SAUTÉ. To cook beef topping, heat oil in a pan then sauté red onion and garlic until translucent. Add ground beef and cook until brown.
- SEASON & SIMMER.. Add in tomato puree, black beans, cumin powder, AJI-GINISA®, salt, and pepper. Lower the heat then simmer for 5-10 minutes.
- ASSEMBLE. On a platter or skillet, place the sweet potato chips. Then top with beef, tomato, avocado, onion, cilantro, cheese, and sour cream/yogurt (optional). Serve and enjoy.
Cooking Tips
You can deep-fry kamote nachos or use an air-fryer if oven is not available.
