Kamias Pasas

SARSAYA® Oyster Sauce

Ingredients

  • 2 cups (380g) Kamias, fresh, trimmed, punctured
  • 2 cups (200g) Sugar, white
  • 2 packs (60ml) SARSAYA® Oyster Sauce

Procedure

  1. EXTRACT. In a large container, place all kamias and mix with 1/2 cup (50g) sugar. Cover and let it extract for 2 days. Discard the extracted liquid then add another 1/2 cup of sugar then let it extract for another 2 days. Discard the extracted liquid.
  2. SIMMER. In a pan, place kamias then add 1/4 cup of sugar and SARSAYA® Oyster Sauce. Simmer for 15 minutes and turn off heat.
  3. BAKE. Transfer cooked kamias on a baking sheet lined with wax paper. Bake in the oven at 72C for 2-3 hours until dry but still plump.
  4. SERVE. Transfer into a container and enjoy as snack!

Cooking Tips

Aside from using an oven, drying the kamias pasas under the heat of the sun can also be done. Make sure to use something to cover the kamias. An example would be the use of a winnowing basket (bilao) as tray and cheesecloth (katsa) as cover.
