Crispy Eggplant Fries with Marinara Dip

Eggplant Fries:
- 1/2 kilo (500g) Eggplant, french-fry cut
- 1/4 tsp. (1.25g) Salt, coarse
- 1 tsp. (5g) TASTY BOY® Breading Mix (Regular)
- 1 pc. (50g) Egg, beaten
- 1 cup (150g) Breadcrumbs
- 1/2 pack (31g) CRISPY FRY® Breading Mix (Original)
- 2 cups (500ml) Cooking oil, for frying
- 3 Tbsps. (45ml) Olive oil
- 1/4 cup (30g) Onion, chopped
- 1/2 Tbsp. (6g) Garlic, chopped
- 1 1/2 cups (350g) Canned tomatoes, crushed
- 3 Tbsps. (45ml) Water
- 1/4 tsp. (1.25g) Salt, coarse
- 1/8 tsp. (0.3g) Black pepper, ground
- 1/4 tsp. (1.25g) White sugar
Procedure
- SEASON & COAT. Season eggplant with salt and TASTY BOY® (Regular). Dip eggplants in egg then coat in breadcrumbs and CRISPY FRY® (Original) mixture.
- DEEP-FRY. In a pan with hot oil, deep-fry the breaded eggplant until golden brown. Drain excess oil using a strainer or collander. Set aside.
- SAUTÉ. To make the marinara sauce, in a pan, heat oil. Sauté onions and garlic until translucent.
- SIMMER. Add the crushed tomatoes and water. Let simmer. Season with salt, pepper, and sugar.
- SERVE. Place the crispy eggplants on a plate, and marinara sauce on a separate bowl. Serve and enjoy.
Cooking Tips
Fry eggplant in batches and avoid overcrowding to ensure crispy fries.
