Chinese Chorizo Fried Rice

AJI-GINISA® Liquid Flavor Seasoning Mix

Ingredients

  • 1/4 tsp. (1.3g) Sugar, white
  • 2 tsp. (10ml) Water, hot
  • 1 tsp. (5ml) Sesame oil
  • 1 tsp. (5ml) Soy sauce
  • 1/4 tsp. (1.3g) Black pepper, ground
  • 3 Tbsps. (45ml) Cooking oil
  • 3 pcs (90g) Chorizo, sliced
  • 1/2 cup (120g) Onion, minced
  • 2 Tbsps. (30g) Garlic, minced
  • 5 cups (1200g) White Rice, cooked
  • 2 pcs. (100g) Eggs, beaten
  • 2/3 cup (170g) Green peas, frozen
  • 1 cup (220g) Mung bean sprouts, blanched
  • 1/4 cup (60g) Scallions, chopped
  • 2 packs (60ml) AJI-GINISA® Liquid Flavor Seasoning Mix

Procedure

  1. COMBINE. In a small bowl, combine sugar, hot water, sesame oil, soy sauce, black pepper, and AJI-GINISA® Liquid. Mix well and set aside.
  2. STIR-FRY. Heat the wok over medium heat and add 1 Tablespoon of oil. Stir-fry the chorizo for 20 seconds. Add the onion and cook for 1-2 minutes until translucent. Increase the heat to high, add the remaining oil and rice, and use a spatula to break up any clumps, stirring longer if using leftover rice to heat it through.
  3. MIX. Once the rice is warmed, evenly pour the sauce over it and mix using a scooping motion for 1-2 minutes until well coated and steaming. Then add the cooked egg, peas, and mung bean sprouts, stir-frying for another minute.
  4. STIR-FRY. Add the scallions and stir-fry for 20 seconds to enhance the wok hei flavor typical of great fried rice from Chinese restaurants.
  5. SERVE. Transfer to a serving plate and enjoy!

Cooking Tips

Use leftover rice for fried rice, as it's drier and less sticky, ensuring a fluffy texture without clumping.
