Chicken Katsu with Cabbage Salad
CRISPY FRY® Original Breading MixIngredients
- 5 pcs. Chicken breast, fillet, butterfly cut
- 1/4 tsp. Salt, iodized
- 1/8 tsp. Black pepper, ground
- 1 pack of 62 g Crispy Fry® Original
- 3 pcs. Eggs, beaten
- 1 tsp. Cooking oil
- 2 1/2 cups Breadcrumbs
- 2 cups Cooking oil
- 1/2 cup Ketchup
- 1/4 cup Worcestershire sauce
- 1 pack of 30 g Sarsaya® Oyster Sauce
- 1 1/2 Tbsp. Brown Sugar
- 4 cups Cabbage, chopped
- 2 Tbsps. Caterserve® Sesame Dressing
Procedure
- SEASON. Season chicken breast with salt and pepper.
- WHISK. Create a wet batter mix using Crispy Fry® Original, eggs, and cooking oil.
- COAT. Dip chicken breast onto wet batter then coat with breadcrumbs. Repeat until finished.
- FRY. Heat oil in a frying pan. Fry chicken katsu for 4-6 minutes or until golden brown. Let it rest for 3 minutes before slicing.
- WHISK. Add ketchup, worcestershire sauce, Sarsaya® Oyster Sauce, and brown sugar in a bowl and whisk until well incorporated.
- SERVE. Add cabbage onto serving plate, pour over Caterserve® Sesame Dressing. Transfer chicken katsu onto serving plate and enjoy with katsu sauce.
Cooking Tips
Soak chicken in brine solution (1 Liter of water + 4 Tbsps. of salt) for at least 30 minutes before cooking for a juicy and flavorful chicken.
