Chicken & Basil Fried Rice

SARSAYA® Oyster Sauce, AJI-SHIO® Garlic Seasoning Mix

Ingredients

Sauce Mixture:
  • 2 Tbsps. (30ml) Fish sauce
  • 1 1/2 packs (45g) SARSAYA® Oyster Sauce
  • 1 tsp. (5g) White sugar
Fried Rice:
  • 4 Tbsps. (60ml) Cooking oil
  • 1/2 cup (50g) White onion, chopped
  • 1/2 kilo (500g) Chicken thigh fillet, skinless, cubed
  • 1/2 pack (9g) AJI-SHIO® Garlic Seasoning Mix
  • 8 cups (1280g) Rice, cooked
  • 1 tsp. (2g) Red chili, thinly sliced
  • 1 cup (25g) Basil, fresh
  • 1/4 cup (40g) Cucumber, sticks
  • 1/4 tsp. (1.25g) Salt, coarse
  • 1/4 tsp. (0.63g) Black pepper, ground
Garnish:
  • 1 cup (25g) Basil, fresh
  • 1/4 cup (40g) Cucumber, sticks
  • 1/8 cup (10g) Sili labuyo, sliced

Procedure

  1. MIX. To prepare the sauce mixture, combine fish sauce, SARSAYA® Oyster Sauce, and sugar in a bowl. Mix well then set aside.
  2. SAUTÉ. To cook fried rice, heat oil in a pan then sauté onion until translucent. Add chicken thighs and AJI-SHIO® Garlic. Sauté until cooked.
  3. TOSS. Add cooked rice, sauce mixture, chili, basil, and cucumber. Toss to combine.
  4. SEASON. Add salt and pepper to taste. Mix well.
  5. SERVE. Transfer to a serving dish and garnish with some fresh basil, cucumber sticks, and siling labuyo. Enjoy hot.

Cooking Tips

If a spicier dish is desired, add the chili at the beginning of sautéing.
