Chicken & Basil Fried Rice
SARSAYA® Oyster Sauce, AJI-SHIO® Garlic Seasoning MixIngredients
Sauce Mixture:
- 2 Tbsps. (30ml) Fish sauce
- 1 1/2 packs (45g) SARSAYA® Oyster Sauce
- 1 tsp. (5g) White sugar
- 4 Tbsps. (60ml) Cooking oil
- 1/2 cup (50g) White onion, chopped
- 1/2 kilo (500g) Chicken thigh fillet, skinless, cubed
- 1/2 pack (9g) AJI-SHIO® Garlic Seasoning Mix
- 8 cups (1280g) Rice, cooked
- 1 tsp. (2g) Red chili, thinly sliced
- 1 cup (25g) Basil, fresh
- 1/4 cup (40g) Cucumber, sticks
- 1/4 tsp. (1.25g) Salt, coarse
- 1/4 tsp. (0.63g) Black pepper, ground
- 1 cup (25g) Basil, fresh
- 1/4 cup (40g) Cucumber, sticks
- 1/8 cup (10g) Sili labuyo, sliced
Procedure
- MIX. To prepare the sauce mixture, combine fish sauce, SARSAYA® Oyster Sauce, and sugar in a bowl. Mix well then set aside.
- SAUTÉ. To cook fried rice, heat oil in a pan then sauté onion until translucent. Add chicken thighs and AJI-SHIO® Garlic. Sauté until cooked.
- TOSS. Add cooked rice, sauce mixture, chili, basil, and cucumber. Toss to combine.
- SEASON. Add salt and pepper to taste. Mix well.
- SERVE. Transfer to a serving dish and garnish with some fresh basil, cucumber sticks, and siling labuyo. Enjoy hot.
Cooking Tips
If a spicier dish is desired, add the chili at the beginning of sautéing.
