Chicken Ball in Curry Sauce Recipe
AJI-GINISA® Flavor Seasoning MixIngredients
Curry Paste:
- 1 tsp. (5g) Ginger
- 1/2 cup (75g) Onion, red
- 1/8 cup (15g) Garlic
- 1/2 pc (0.5g) Chili, labuyo
- 1/4 cup (40g) Lemongrass
- 2 tsps. (5g) Turmeric powder
- 2 tsps. (5g) Curry powder
- 1 Tbsp. (15g) Cooking oil
- 1 cup (250g) Chicken, ground
- 1/2 tsp. (1.1g) Cumin, powder
- 1 pc. (50g) Egg, beaten
- 1/4 cup (15g) Breadcrumbs
- 1/2 pack (4g) AJI-GINISA® Flavor Seasoning Mix
- 2 Tbsps. (24ml) Cooking oil
- 2 tsps. (8ml) Cooking oil
- 2/3 cup (150g) Curry paste
- 2 cups (500ml) Water
- 1 cup (250ml) Coconut cream
- 1/2 tsp. (2.5ml) Fish sauce
- 1/2 pack (4g) AJI-GINISA® Flavor Seasoning Mix
Procedure
- POUND. To make curry paste, combine ginger, onion, garlic, chili, lemongrass, turmeric powder, curry powder, and oil in a mortar and pestle. Pound everything together until paste-like. Set aside.
- MIX & MOLD. To prepare the chicken ball, combine chicken, cumin, egg, breadcrumbs, and AJI-GINISA® Flavor Seasoning Mix in a bowl. Take a spoonful (25g) of the mixture and form into a ball.
- SEAR. In a hot pan, heat oil. Sear the chicken balls until brown. Set aside.
- SAUTÉ & SIMMER. To cook the curry sauce, heat oil in a hot pot. Sauté the curry paste until all the aroma of the spices comes out. Then, add in water, coconut cream, and chicken balls. Simmer until desired consistency is achieved.
- SEASON. Add fish sauce and AJI-GINISA® Flavor Seasoning Mix. Mix well. Serve while hot.
Cooking Tips
In pounding the ingredients, you may use a food processor if mortar and pestle is not available.
