Chicken and Pork Asado
AJI-NO-MOTO® Umami SeasoningIngredients
- 1 cup (160g) Pork pigue, cubed
- 1 1/2 cups (200g) Chicken breast, cut into small pieces
- 1 Tbsp. (15ml) Soy sauce
- 1 Tbsp. (15ml) Calamansi juice
- 1 Tbsp. (15ml) Vegetable oil
- 1 cup (100g) Onion, sliced
- 1 Tbsp. (10g) Garlic, minced
- 3/4 cup (150g) Tomato, cubed
- 1 Tbsp. (15ml) Soy sauce
- 1/4 cup (60ml) Tomato sauce
- 3 Tbsps. (45ml) Calamansi juice
- 1/4 tsp. (0.6g) Ground black pepper
- 2 Tbsps. (30g) Brown sugar
- 2 cups (500ml) Water
- 1 pack (10g) AJI-NO-MOTO® Umami Seasoning
- 1/2 cup (125ml) Vegetable oil, for frying
- 2 pcs. (150g) Saba banana, peeled and quartered
- 1 1/2 cups (300g) Kamote, peeled and cubed
Procedure
- MARINATE. In a bowl, combine pork, chicken, soy sauce, and calamansi juice. Mix well and marinate for at least 2 hours or overnight.
- SAUTÉ. In a pan, heat oil. Sauté onions, garlic, and tomato. Add pork and cook until lightly browned.
- SIMMER. Add soy sauce, tomato sauce, calamansi juice, black pepper, sugar, and water. Simmer until pork is tender (about 1 hour). Add chicken and AJI-NO-MOTO®. Cook until chicken is tender (about 20 minutes). Set aside.
- FRY. In a separate pot, heat oil. Fry banana and kamote separately. Drain excess oil using strainer or collander.
- SERVE. Combine fried banana and kamote with the chicken and pork asado. Transfer to a serving dish. Serve and enjoy.
Cooking Tips
Frying the saba bananas and kamote until golden brown not only improves the color and flavor of the dish but also adds a nice crispness to the asado.
