AJI-NO-MOTO® Umami SeasoningIngredients
- 1 1/4 tbsp. (20ml) Cooking oil
- 2-3 pcs. (1000g) Beef shank
- 2/3 cup (100g) Red onions, quartered
- 7 cloves (28g) Garlic, minced
- 2 tbsp. (30ml) Fish sauce
- 1/4 tsp. (5g) Atsuete seeds
- 8 cups (1800ml) Water
- 4 cups (400g) Batwan
- 1 1/2 pack (16g) AJI-NO-MOTO® Umami Seasoning
Procedure
- SEAR. In a heavy pot, heat oil and sear beef shanks until browned. Add red onions and garlic to saute for 30 seconds.
- BOIL. Add water to boil until the meat is tender. Place the annatto seeds on the strainer and let the atsuete extract to the pot. Add the batwan to the pot and lower down the heat. Boil for 5 minutes.
- SEASON. Season the pot with AJI-NO-MOTO®.
- SERVE. Transfer onto serving bowls and enjoy!

Batwan can be substitutable with 100g of Batwan paste (if batwan is not available).
