Beef Rendang
SARSAYA® Oyster SauceIngredients
- 1/4 cup (60g) Rice, uncooked
- 1 cup (100g) Niyog, shredded
- 1/2 cup (50g) Spring onions, white part, chopped
- 1 Tbsp. (10g) Ginger, minced
- 2 pcs. (5g) Chili, chopped
- 1 1/2 Tbsp. (7g) Turmeric powder
- 1/4 cup (30g) Lemongrass, white part, chopped
- 1 cup (250ml) Coconut milk
- 3/4 kilo (750g) Beef, cubed
- 4 tsps. (20ml) Cooking oil
- 1 1/2 cups (375ml) Water
- 1 cup (250ml) Coconut milk
- 4 pcs. (1g) Kaffir lime leaves
- 1/8 tsp. (0.2g) Lime
- 2 packs (60g) SARSAYA® Oyster Sauce
- 1/4 tsp. (1g) Salt
Procedure
- TOAST. Heat a pan and toast rice until browned. Grind the rice in a mortar and pestle or use a food processor for a finer result. Set aside. In the same pan, toast the coconut meat until browned, (10 minutes). Repeat the same process of grinding and set aside.
- BLEND. Blend spring onions, ginger, chili, turmeric powder, and lemongrass in a blender or food processor. You may use a mortar and pestle if no blender or food processor is available. Gradually add in 1/4 cup of coconut milk for easier blending until the full 1 cup is put in the mixture.
- MARINATE. Marinate beef cubes with the pulverized rice and blended mixture for at least 10 minutes.
- SEAR. On a pan, heat cooking oil and sear the marinated beef cubes for 5 minutes. Then add water, coconut milk and kaffir lime leaves. Mix well.
- SIMMER. Put on the lid and let it simmer until beef is tender. Add toasted coconut meat from Step 1. Stir occasionally to prevent burning.
- SEASON. Add lime zest, SARSAYA® and salt. Mix well.
- SERVE. Transfer onto a serving plate and enjoy!
Cooking Tips
For a faster cooking process, you may pre-cook the beef using a pressure cooker before marinating the beef.
