Beef Kaldereta (using Jarred Tomato Sauce)

AJI-NO-MOTO® Umami Seasoning

Ingredients

  • 3 1/2 cup (809g) Jarred tomato sauce (https://www.cookmunitybyajinomoto.com/recipes/jarred-tomato-sauce/)
  • 7-8 pcs. (500g) Beef chuck
  • 2 pcs. (6ml) Calamansi, juiced
  • 2 tsp. (10g) Salt, iodized
  • 1/2 tsp. (1g) Pepper, ground
  • 1 pack (11g) AJI-NO-MOTO® Umami Seasoning
  • 1 1/4 tbsp. (20ml) Cooking oil
  • 2 1/4 cup (550ml) Water
  • 2/3 cup (100g) Carrots, rough chop
  • 1 cup (225g) Potato, cubed
  • 1 cup (90g) Green Peas, canned
  • 1/4 cup (24g) Cheese, grated
  • 1/8 tsp. (0.8g) Chili flakes (to taste)

Procedure

  1. MARINATE. Marinate beef with calamansi juice, salt, pepper and AJI-NO-MOTO®.
  2. SEAR. In a deep pan, heat oil then sear marinated beef until browned.
  3. SIMMER. Add water to the pot and boil to a simmer until the meat is tender. Close the lid. (Add water if needed) Once tender, add tomato sauce, carrots, and potatoes. Simmer until sauce thickens and carrots are cooked. Then add the green peas, cheese and chili flakes.
  4. SERVE. Transfer onto serving plate and enjoy. (Best served with rice and can be garnished with spring onions)

Cooking Tips

Adjust seasonings to taste, different tomatoes have different sweetness and taste.
