Beef Kaldereta
AJI-NO-MOTO® Umami SeasoningIngredients
- 1 1/2 liters (1500ml) Water
- 1/2 kilo (500g) Beef, lean, cube
- 2 Tbsps. (30ml) Cooking oil
- 1/2 cup (87.5g) Potato, cubed
- 1/2 cup (66g) Carrots, cubed
- 1/2 cup (60g) Onion, sliced
- 2 Tbsps. (20g) Garlic, minced
- 1 Tbsp (15g) Tomato paste
- 3/4 cup (187.5g) Tomato sauce
- 2 Tbsps. (30g) Liver spread
- 3/4 cup (187.5ml) Beef broth
- 1/4 tsp. (1.25g) Black pepper, ground
- 4 tsps. (20ml) Fish sauce
- 1/2 pack (5.5g) AJI-NO-MOTO® Umami-Seasoning
- 4 tsps. (20g) Sugar, brown
- 1/4 cup (30g) Red bell pepper, sliced
- 1/4 cup (30g) Green bell pepper, sliced
- 1 piece (3g) Red chili, chopped
Procedure
- BOIL. In a pressure cooker, add water and beef. Cook meat until tender for about 20-25 minutes. Once cooked, seperate beef and broth then set aside.
- FRY. In a pan, heat oil then fry potato and carrots until golden brown. Drain excess oil using a colander then set aside.
- SAUTE & SIMMER. In the same pan, saute onion & garlic until fragrant. Add tomato paste and saute for a minute. Mix-in beef onto the pan then add tomato sauce, liver spread, and beef broth, mix and simmer until sauce has thickened.
- SEASON. Add fried potato and carrots then season with fish sauce, AJI-NO-MOTO®, and sugar. Add red & green bell pepper and chili, mix well.
- SERVE. Transfer on a serving bowl. Serve & enoy while hot!
Cooking Tips
If pressure cooker is not available, cook the beef over medium fire at simmering temperature until desired tenderness is achieved.
