Beef and Carrot Croquettes

Carrot & Gabi Mixture
- 2 cups (300g) Carrots, peeled & cut into cubes, boiled & mashed
- 2 cups (300g) Gabi, peeled & cut into cubes, boiled & mashed
- 1 pack (8g) AJI-GINISA® Flavor Seasoning Mix
- 1/2 cup (50g) All-purpose flour
- 2 Tbsps. (30g) Cornstarch
- 1 Tbsp. (15ml) Vegetable oil
- 1 cup (100g) Onion, minced
- 3 Tbsps. (30g) Garlic, minced
- 2 Tbsps. (20g) Celery, minced
- 1/4 kilo (250g) Ground beef
- 1/4 cup (80g) Red bell pepper, minced
- 1 1/2 Tbsps. (25g) Tomato paste
- 1/2 tsp. (2.5g) Salt, coarse
- 1/2 tsp. (2.5g) Ground black pepper
- 3/4 cup (75g) Cheddar cheese, grated
- 1/2 cup (50g) All-purpose flour
- 2 pcs. (100g) Egg
- 1/4 cup (75g) Breadcrumbs
- 3 cups (750ml) Cooking oil, for frying
Procedure
- MIX. In a bowl, combine carrots, gabi, AJI-GINISA®, flour, and cornstarch. Mix well then set aside.
- SAUTÉ. In a pan, heat oil. Sauté onion and garlic. Add celery and beef then cook until browned. Add bell pepper, tomato paste, salt, and pepper. Cook for 1 minute. Drain excess oil and let cool. Mix in grated cheese. Set aside.
- SHAPE. Divide both mixtures into 14 portions each. Wrap one portion of beef mixture using one portion of carrot & gabi mixture then form into a ball. Cover with cling wrap then chill for 20 minutes.
- DREDGE & DEEP-FRY. Dredge croquettes with flour, egg, then breadcrumbs. In a pot, heat oil on low heat. Deep-fry croquettes until golden brown.
Cooking Tips
To make a cheesier version for special occasions, serve the croquettes topped with more grated cheese or substitute the cheddar cheese with cubed mozzarella or grated queso de bola.
