Orange Chicken

CRISPY FRY® Breading Mix Original

Ingredients

FOR THE CHICKEN
  • 1kg. (995g) Chicken thighs, boneless, skin-on, cut into bite-sized
  • 1 pack (62g) CRISPY FRY® Breading Mix Original
  • 2 pcs. (100ml) Egg, beaten
  • 2 cups (500ml) Oil
FOR THE SAUCE
  • 1 and 1/2 cup (340ml) Orange Juice
  • 1/4 cup (60g) Sugar
  • 1 Tbsp (15ml) Vinegar
  • 1/2 tsp. (2.5g) Ginger, grated
  • 3 cloves (15g) Garlic, minced
  • 2 tsp. (10g) Orange zest
  • 2 tsps. (10ml) Sesame oil
  • 2 tsp. (10g) Cornstarch
  • 2 Tbsps. (30ml) Water
  • 1 tsp. (5g) Salt, iodized
  • 1 Tbsps. (15g) Spring onion, chopp]ed, for garnish

Procedure

  1. COAT. Coat the chicken in CRISPY FRY®, dip in egg, then coat again with CRISPY FRY®. Set aside on a plate.
  2. FRY. Heat oil in a heavy pot over medium-high heat. Fry the chicken in batches, turning often, until golden brown. Transfer to a paper towel-lined plate and set aside.
  3. SIMMER. In a pot, combine orange juice, sugar, vinegar, ginger, garlic, and zest. Simmer for 3 minutes, strain, then return to the pot. Add sesame oil and simmer for 1 minute.
  4. THICKEN. Whisk 2 tsp cornstarch with 2 Tbsp water in a small bowl to make a slurry. Gradually stir it into the pot and cook for 3 minutes until the sauce reaches your desired consistency. Season with salt and remove from heat.
  5. TOSS AND SERVE. Toss the chicken with the orange sauce until evenly coated. Sprinkle the dish with green onions and enjoy!

Cooking Tips

To prevent the chicken from becoming soggy, toss it right before serving. This helps maintain its crispiness and texture.
