Festive Poqui Sliders (LSR)
AJI-NO-MOTO® Umami SeasoningIngredients
- 4 pcs (500g) Eggplant, diced
- 2 Tbsps (30ml) Cooking Oil
- 1/4 cup (80g) Onion, minced
- 2 tsps. (10g) Garlic, minced
- 1/2 cup (120g) Tomato, diced
- 1 Tbsp. (15g) Green chili peppers, minced
- 2 pcs (100g) Egg, beaten
- 1 and 1/4 cup (330g) Breadcrumbs
- 1/2 tsp (2.5g) Cinammon
- 1/4 tsp (2g) Salt, iodized
- 1/2 tsp (2.5g) Black pepper, ground
- 1 pack (11g) AJI-NO-MOTO® Umami Seasoning
- 2 cups (500ml) Cooking Oil (for frying)
- 10 pcs. (250g) Slider buns
- 1/2 cup (120ml) Pineapple Jam
- 1 pack (208g) Cheese slices
- 1/4 cup (60g) Mayonnaise
- 2 pcs (360g) Romaine Lettuce
Procedure
- GRILL. Char eggplants over a flame or broiler until soft. Cool, peel, and roughly chop. Set aside. (2-3 minutes).
- SAUTE. In a pan, heat cooking oil and saute onions, garlic, and tomatoes in oil until softened. Add chili peppers if desired. (2-3 minutes)
- MIX. In a large bowl, mix grilled eggplant, sautéed mixture, eggs, breadcrumbs, cinammon, salt, pepper, and AJI-NO-MOTO®. Mix well. The mixture should be moist but firm enough to hold its shape; adjust with more breadcrumbs if needed.
- SHAPE AND FRY. Scoop a 1/8 cup and form into patties. In a skillet, heat cooking oil over medium heat and fry the patties until golden brown on both sides ( 3-4 minutes per side).
- ASSEMBLE AND SERVE. Layer of pineapple jam, poqui-poqui patty, cheese, lettuce and mayonnaise on slider buns. Serve warm.
Cooking Tips
Drizzle olive oil onto a skillet and toast slider bun's cut side down until golden brown.
