Baked Macaroni (LSR)

AJI-NO-MOTO® Umami Seasoning

Ingredients

FOR CHEESE SAUCE
  • 3 Tbsps. (45ml) Butter, unsalted
  • 3 Tbsps. (45g) All-purpose flour
  • 2 cups (500g) Milk, fresh, whole
  • 1 cup (250g) Cheese, quick melt, grated
  • 1/2 pack (5.5g) AJI-NO-MOTO® Umami Seasoning
  • 1/2 tsp. (3g) Salt, iodized
  • 1/4 tsp (1.25g) Black Pepper, ground
FOR MACARONI
  • 3 cups (720ml) Water
  • 1 tsp. (5g) Salt
  • 1 pack (500g) Macaroni Pasta
FOR THE RED SAUCE
  • 2 Tbsps. (30ml) Cooking Oil
  • 2 Tbsps. (30ml) Butter, unsalted
  • 1/4 cup (60g) Onion, minced
  • 2 Tbsps. (30g) Garlic, minced
  • 1 cup (240g) Bellpepper, small diced
  • 2 cups (500g) Ground Beef
  • 1 tsp. (5g) Salt, iodized
  • 1 pack (11g) AJI-NO-MOTO® Umami Seasoning
  • 1/2 tsp. (2.5g) Black Pepper, ground
  • 1 cup (240g) Eggplant, diced
  • 1 can (284g) Mushroom, pieces and stems
  • 1 pack (900ml) Spaghetti Sauce, Filipino Style
  • 1 cup (80g) Spinach
  • 1 1/2 cups (360ml) Water
  • 1 cup (250g) Cheese, quick melt, grated

Procedure

  1. MELT. In a saucepan, melt butter. Stir in flour and mix well. Gradually add milk, stirring until thickened. Add 1 cup grated cheese and stir until smooth. Season with AJI-NO-MOTO®, salt, and black pepper. Mix well. Set aside.
  2. BOIL. In a large pot, cook macaroni in salted boiling water until al dente. Drain and set aside.
  3. SAUTÉ AND SEASON. In a separate pan, add oil and butter, and sauté onion, garlic, and bell pepper until soft. Add ground beef and season with salt, AJI-NO-MOTO®, and pepper. Add eggplant and mushrooms, and cook until softened.
  4. SIMMER. Add spaghetti sauce, cooked macaroni, spinach, and water. Simmer for 5 minutes while stirring occasionally.
  5. BAKE AND SERVE. Transfer to a baking dish, layer macaroni and cheese sauce in a baking dish, top with grated cheese,, then bake in a preheated oven at 180°C (356 °C ) for 15 minutes. Remove from oven and let it cook slightly. Garnish with fresh parsely and cheese, as desired.

Cooking Tips

Undercook your macaroni slightly (about 1-2 minutes less than the package suggests) when boiling, so it stays perfectly al dente after baking
