AJI-NO-MOTO® Umami Seasoning

Ingredients

  • 2 Liters (2000ml) Water
  • 1/4 tsp. (2g) Salt
  • 1 pack (500g) Palabok Noodles (Rice noodles)
  • 1 Liter (1000g) Water
  • 15 pcs. (250g) Shrimp
  • 2 Tbsps. (97g) Cooking Oil
  • 1/2 cup (150g) Onion, diced
  • 4 Tbsps. (1000g) Garlic, minced
  • 1/2 kilo (97g) Pork, ground
  • 1/4 cup (150g) Fish Sauce
  • 1/4 tsp. (1.3g) Salt, iodized
  • 1 tsp. (3g) Black Pepper, ground
  • 1 Tbsp. (15g) Annato powder
  • 2 Tbsps. (30g) Cornstarch
  • 4 pcs. (200g) Eggs, hard-boiled
  • 1/2 cup (30g) Chicharon, crushed
  • 1/4 cup (60g) Green onions, chopped
  • 12 pcs. (36g) Calamansi, sliced in half
  • 1 pack (11g) AJI-NO-MOTO® Umami Seasoning

Procedure

  1. BOIL. In a large pot, bring water with ¼ teaspoon of salt to a boil. Then cook the rice noodles until al dente or firm to the bite. Drain the water and set aside.
  2. BOIL. In the same pot, boil the shrimp with its shell in water until opaque. Then remove and let cool. Deshell the shrimps and put back crushed shrimp head and shells on the shrimp broth. Let it boil to extract more shrimp stock. Strain and reserve shrimp stock for the sauce.
  3. SAUTE. In a large skillet over medium heat, heat oil. Saute garlic and onion until fragrant. Then add ground pork, fish sauce, black pepper and season with AJI-NO-MOTO®, cooking until light brown. Mix annatto powder into shrimp stock, pour it into the skillet, stir, and simmer for 10 minutes, adding water if needed.
  4. DISSOLVE. Dissolve cornstarch in ½ cup of water, stir it in, and mix until the sauce thickens. Let it simmer for another 5 minutes.
  5. SERVE. Place the noodles on a serving plate. Pour enough sauce on top of the noodles, then arrange the toppings (shrimp, egg, chicharon, green onions, calamansi) over the sauce.

Cooking Tips

To prevent overcooking shrimp, watch for a pink color change and remove them from heat as soon as they’re done; an ice bath helps stop the cooking!
