Frozen Kangkong Laing
PORKSAVOR® All-In-One Seasoning MixIngredients
- 3 cups (160g) Kangkong leaves, washed
- 1/4 kilo (250g) Pork liempo, strips
- 1 1/2 Tbsps. (20g) Garlic, minced
- 1/4 cup (30g) Onion, sliced
- 1 Tbsp. (10g) Ginger, strips
- 1 tsp (10g) Bagoong
- 2 cups (400ml) Coconut milk
- 1 pack (8g) PORK SAVOR®
- 1 pc. (7g) Green chili, chopped
- 1 pc. (1g) Red chili, chopped
Procedure
- BLANCH. Blanch spinach for 2 minutes. After blanching, put in ice bath then drain. Store spinach leaves on small containers or a ziplock bag. Place in the freezer and leave at least overnight to freeze. You can use the frozen spinach up to 6 months.
- SAUTE. On a heated pan, saute liempo for 10-15 minutes. Once golden brown and fat has rendered, saute garlic, onion, and ginger. Add bagoong. Mix well.
- SIMMER. Add coconut milk and let it simmer for at least 5 minutes.
- SEASON. Season with PORK SAVOR® and mix well. Add in the spinach.
- SIMMER. Add coconut milk and let it simmer for 10 minutes until reduced. Add chilies. Let it simmer for another 2 minutes.
- SERVE. Transfer to a serving plate and enjoy with rice!

It is optional to add a teaspoon of vinegar in this recipe to help it preserve a little longer.
