Vegetable Atchara
AJI-NO-MOTO® Umami SeasoningIngredients
- 4 cups (500g) Green papaya, grated
- 3/4 cup (65g) Carrots, julienned
- 3 Tbsps. (45g) Salt, rock
- 1 Liter (1000ml) Water
- 1 1/3 cup (250g) Sugar, white
- 1/2 Tbsp (12g) Salt, iodized
- 1 pack (11g) AJI-NO-MOTO® Umami Seasoning
- 2 1/4 cups (560ml) Cane vinegar
- 1/4 cup (60ml) Water
- 1 1/2 Tbsp. (15g) Garlic, minced
- 1/8 tsp (1g) Black pepper, ground
- 1/2 cup (45g) Red bell pepper, julienned
- 1/4 cup (20g) Ginger, strips
- 1/2 cup (60g) Raisins
Procedure
- SOAK. Mix together salt and water. Soak grated papaya in the mixture for at least 1 hour. Drain water and squeeze out excess water. Soak again the papaya with water, then squeeze out the excess water from the papaya using a cheesecloth. Set aside.
- STERILIZE. In a pot with boiling water, place your glass jars and lids and sterilize it for at least 10 minutes. Make sure it is fully submerged in the water. Remove from the water once done.
- MIX. Add the carrots, garlic, bell pepper, ginger, and raisins into the papaya. Mix together then transfer the mixture into the sterilized jars. Make sure to leave at least an inch above the rim to allow space for the vinegar solution later on. Set aside.
- BOIL. In a pot, bring to a boil the cane vinegar for about 10 minutes. Add in the sugar, salt, pepper, and AJI-NO-MOTO®. Let it dissolve and boil for another 5 minutes.
- POUR. Pour the vinegar solution into each jar filled with achara. Cover it tightly.
- STORE. Let it cool down for at least 30 minutes and place it in the refrigerator for at least 2 days before consumption.
- SERVE. After 2 or more days, serve it with your favorite dish. Enjoy!
Cooking Tips
Squeezing out the excess water in papaya using salt is essential to achieve a better atchara texture. Preventing excess water that will seep out of the vegetables is also important to prevent growth of microorganisms and further spoilage of the atchara.
