What makes this Filipino dish extra unique is its beautiful, breathtaking black sauce. Masarap, kahit mukhang kakaiba! This looks like a meal straight from a chef’s kitchen, but in reality, it’s a breeze to make! You can do it. Simple lang!
Start by cooking your pasta. Boil some water and follow the instructions in the packaging. Remember not to overcook it—we still want it to have a little texture! While that’s boiling, we can proceed with our sauce.
In a hot pan, drizzle in your choice of cooking oil and sauté your garlic for a couple of minutes. Then, add in your tomatoes, coriander, chillies, red wine, and squid ink. Give it 2-3 minutes to simmer. When it’s all good and steamy, add in your pieces of squid and mussels. Cover it with the lid and give the flavors some time to incorporate with each other. When the mussels have opened up its shells, it’s time to season!
Add in a dash of fish sauce, ground pepper, and AJI-NO-MOTO® Umami Seasoning for a more Umami-linamnam taste! Mix in the pasta with the sauce, and it’s good to go!

Who would’ve thought that a simple and modest Filipino staple can be given a gourmet twist? It just takes a little bit of creativity in the kitchen, and our favorite dried fish can be a fancy gift to share with loved ones, especially that the Christmas season is fast approaching!
Tuyo is usually served fried with rice and tomatoes on the side for breakfast. Let’s kick it up a notch! Try making Gourmet Tuyo, fancy and easy! Madali lang ‘tong gawin!
Start by heating up your oil in a pan and fry your tuyo until it’s cooked nicely. Remove the excess oil and set aside your tuyo pieces.
Take another pan and over low heat, combine olive oil, garlic, bay leaves, carrots and AJI-SHIO® Garlic Seasoning Mix (18g). Slow cook your mixture until it’s fragrant and has a slightly golden brown color. Set this mixture aside.
Now, get your fried tuyo and fillet it. Remove the scale, head, and spine of each piece of tuyo and carefully pack them into your glass jars. Pour in your garlic and olive oil mixture and close it up for preservation! Remember to store these for at least a month before serving. This is a winning gift idea for the holiday season.
