Boil your longganisa in a pan and wait for the water to dry up and let the longganisa continue cooking in its own fat. Once it’s cooked, take it out of the pan, and fry your eggs. Time to assemble!
On a plate, put in some garlic fried rice, longganisa, and eggs. Add in slices of tomatoes to keep the meal balanced, then serve!

Before cooking, prepare the mushrooms first. In ¼ cup of hot water, let your blackwood ear mushroom sit for about 15 minutes. While we let that rehydrate, get a pan and fry your tofu until golden brown, then add in your dried anchovies. When it’s all cooked, drain the excess oil and set aside. In the same pan, saut é your garlic, onion, ginger, and carrots. Add in your rice and s auté for 30 seconds. Once it’s all fragrant, pour in some water and stir continuously until rice is cooked.
